Now when a user goes to, they end up asking Cloudlfare where your server lives. WITH cloudflare, now your recursive DNS provider knows to go look at Cloudlfare, because your changed the nameservers to cloudflare therby making it your authoritative DNS. User goes to, computer asks its recursive DNS, hey where does live? What used to happen, is your registrar probably acted as your authoritative DNS so would tell user that lives at your servers IP. When you change the Nameservers at your registrar, that tells the internet that Cloudlfare is your authoritative DNS.
